This unique Primitivo (also called Zinfandel) grapes were sourced from a vineyard located in Kenwood, Sonoma. It was farmed by a young farmer Ross and his brother, who provide organically grown produce to the Chez Panisse in Berkeley.
The grapes were farmed with no sulfur application during growing season, and hand-harvested on Sep 21, 2019 . It was fermented with 100% whole cluster with the minimum use of sulfur during fermentation and aging. It retained super lacy acidity and smooth tannin, lots of red and black fruits and tobacco flavors with a savory-umami taste, which lingers in the mouth.
It was aged with neutral barrels to retain fruit's purity and the integrity of the site and the grower's passion in organic farming.
