Fermentation & Aging

The second vintage of Beni Chōji Rouge is crafted as a casual, versatile red blend designed for everyday enjoyment. Sourced from Mendocino County, it brings together Pinot Noir and Grenache from Alder Springs Vineyard.

This vintage shows a fresh, approachable profile that pairs effortlessly with a wide range of cuisines. Grenache contributes brightness and lifted red fruit, while Pinot Noir adds a subtle savory texture and structure. The wine is made to be enjoyed slightly chilled, highlighting its vibrant character, soft tannins, and lively acidity.

Fermentation was carried out with a focus on preserving freshness and aromatic purity, followed by aging in neutral vessels to maintain the transparency of fruit and site. The result is a balanced, easy-drinking red that reflects both the high-elevation energy of Alder Springs and the spirit of a relaxed, everyday wine.
